Recipe Day

The Bag Lady doesn't have a whole lot to share with you today. She has been working away at a variety of things, none of which are very exciting. A large part of yesterday was devoted to mowing her lawn (it takes about 3 hours on a ride-on lawn mower) and pulling weeds. She's working on some new bags, but hasn't gotten any of them to the point where they are ready for viewing.


She has a nice, simple recipe to share with you:


Greek Pork Pita Pockets


Cut 1 lb boneless pork loin into thin strips.

Combine:

4 Tbsp each olive oil & lemon juice,

1 Tbsp prepared mustard,

2 cloves minced garlic, and

1 tsp dried oregano.

Pour over pork, refrigerate from 1 to 8 hours.


Stir together:

1 C plain yogurt

1 chopped, peeled cucumber

1/2 tsp crushed garlic

1/2 tsp dill weed.

Cover and refrigerate.


Remove pork from marinade. Stir-fry in non-stick pan over med heat 2 - 3 minutes.

Halve 2 pita pockets and open to form pocket.

Fill with pork.

Top with cucumber mixture.

Garnish with chopped red onion.

Im not a pork eater---anything else I could use?
(not because Im jewish but BECAUSE Im jewish I grew up not eating it and so I dont care for it..)

and perhaps (if you can resize? the MizFit sucketh at that :)) we can post a bag pic in place of a YOU PICK when you're guest blogging for the Bumbling Band?

Thanks! I am in the same place as Mizfit, not a pork eater, so any substitute suggestion would be great. Also, if someone is in the neighborhood and could cook it for me, that would be better! :-)

The Infidel family LOVES pita recipes!!!

I make this hot chicken divan with pecans in the crockpot and then we stuff it into pita bread. It is so YUM!

One of our favorite pork recipes is throwing cubed pork loin into the crockpot with red onions, quartered potatoes, and pouring bottled salsa verde over the top. It's really easy and really good.

Even our relatively small yard takes 1 hour via push mower. I was injured last year in a truck accident and had to call in my second string mowing replacement(my son) to take over the job.

I've been investigating something called "lasagna gardening." The creator SWEARS that you don't have to pull weeds once you have the system established. You should google it. :)

So I just had to delete and rewrite a comment I made on my own blog talking about you being an Evil Temptress with all your delicious recipes--implying that they were "special occasion" dishes.

This looks awesome and really healthy too! And for us whole-grain freaks, pita pockets come in whole wheat now too, so I'm definitely gonna try this out.

Sounds yummy, Baggie and actually I know it is.. it's very similar to something I prepare occasionally.. right down to the makeshift Tzatziki sauce.. yum. You could easily substitute lamb or chicken. It's good pretty much any way.

This would work just as well with lamb or beef, I think.
Miz - I'll email you a photo, but I am not sure about resizing, either...
Missicat - I promise, if you come here, I'll make you this (with beef!)

EWBL - Yum - I'll have to try the cubed pork with salsa verde! And I'll look into "lasagna gardening" - anything where you don't have to pull weeds works for me!!

If you make the cucumber sauce for this with non-fat yogurt, it's even better for you!

Crabby - I am definitely a whole grain freak - where do you find whole grain pitas? Trader Joe's makes wonderful whole grain wraps, but I haven't seen pitas.
Question: Why is it so hard to find whole grain bread at WHOLE Foods? hmmmm.....

Sounds good. Not much of a pork eater either, but I'm sure any other souvlaki meat would slot in without too much fuss.
Your Tzatziki sauce sounds lovely.

It must be a regional thing--I've been finding whole wheat pita at the grocery store too, Safeway on the west coast and grand union on the east. Can't remember the brands.

And I agree about Whole Foods-they may do a lot of organic but they sure love the white flour and butter and sugar! (Even if they call it "cane sugar" or whatever).
