Another weekend gone!
The Bag Lady spent a mostly quiet weekend, hanging around the house. She did some housework, and did some yard work, and painted a chair. She also made a dessert last night that turned out very well. In fact, she was so pleased with it, that she will share the
Peanut Butter Cheesecake
Graham Cracker Crust:
Mix together:
1 Cup graham crackers, crushed
1/3 C melted butter
press into pie plate, chill 15 minutes.
Filling:
12 oz softened cream cheese
2/3 C creamy peanut butter
14 oz can Sweetened Condensed Milk (low-fat)
1/3 C lemon juice
1 tsp vanilla
4 1/2 oz Cool Whip
Mix first 5 filling ingredients, beating well. Fold in Cool Whip.
Pour into crust.
Chill for 3 hours.
Before serving, drizzle with chocolate sauce.
(The Bag Lady also added some extra Cool Whip, and garnished with Reese's Peanut Butter Bites)

She and the Rancher also spent a good portion of the weekend watching the chuckwagon races on television. The Calgary Stampede is on, and the Rancher and the Bag Lady are acquainted with several of the chuckwagon drivers, so they always watch the races and root for the hometown boys!

Miz - thanks! I'm not sure why they include the lemon juice, unless it acts as some kind of stabilizer for the cream cheese....? (Maybe Marianne will wander by - she knows stuff like that!)
Crabby - oops, sorry! I had extra peanut butter and wanted to try something different. (I know that's not an excuse, but it's the best I can do this morning!)

Bad Baggie! First you make me drool, and then you tell me it has Cool Whip in it! (I'm allergic to something in it.)
(And there's no such thing as "extra" peanut butter, anymore than there's "extra" flour, or shortening....)
So, where is the picture of the chair? It's quite safe for me to drool over that.

dfLeah - I was amazed at how good it was! I actually made it thinking hubby would like it... he'll be lucky to get any more! :)
Mary Anne in Kentucky - You could actually leave the Cool Whip out - I tasted it before I added it and it was really good!
The chair isn't quite done yet - I haven't got the second coat of paint on yet!
I'd like to know how one has extra peanut butter on hand! And darn you for making me crave it for breakfast. I must never make this. :)

And how calorie laden can it be? You did tell us to use low-fat sweetened condensed milk!
Chuckwagon races look like fun. I went to a swamp buggy race once and had a grand old time, although it was a little muddy!

Hmm. Me thinks I will make that for my children. The acid in the lemon juice reacts with the cream cheese and sweetened condensed milk and causes it to coagulate (oooh, yummy!). Like when you put an acid in milk to clabber it when you have no buttermilk? You can make a simple cheese cake out of 8 oz cream cheese, 1 can s/c milk and 1/3 - 1/2 cup lemon juice, and top it with fruit (my brother's favorite). Don't you just love it when the comment is almost as long as the post?? LOL.

Hilary - I bought a jumbo jar of generic smooth PB - hubby didn't care for it, so had to buy a jumbo jar of his fave. Decided I needed to use the generic brand somehow....

They show the Stampede (on satellite) on the "Bold" Channel - I'm guessing it might be shown in Sask., too - there are a lot of Chuckwagon drivers from there!
Looks scrumptious! My hubby doesn't care for peanut butter-type things, so, I don't bake a lot with it. Wait a minute! I don't bake! Hehe! Have a great time watching the races. We will be cheering them on as well!

Do you think that it would work to use peanut butter rather than butter in the crust? It would be like a peanut butter explosion of cheesecake! Yummy.
Sagan - if you want a peanut explosion in your crust, try adding chopped peanuts to the crushed graham wafers - I don't think you can get the peanut butter to melt to the same consistency as butter or margarine to hold the crust together.
(the melted butter hardens and holds the graham wafer crumbs in their shape.)

We have a lovely guest room within walking distance to the Grounds.
It's a long slog back (pulling a wagon with a grandson in it) after a full day down there but the welcome mat is out for you both. Beer in the fridge and a bug ree balcony to enjoy it on. (The downtown smog gits 'em)
Love watching the rodeo recap and chucks. Too bad about Reg's horse. Can you say which drivers you know?

The drivers we are personally acquainted with are Kelly and Kirk, Rick, and Hughie. Reg is my cousin's "next-door" neighbour, too. Jerry Bremner's brother lives a couple miles away from us. It's a small world, the chuckwagon world.
Hubby's uncle worked (years ago) for Ralph Vigen (the greatest driver EVAH!) and Ivor Bolin, and was buddies with Hughie's dad.
